300gr. brown lentils
2 onions, cut into chunks
4 cloves of garlic chopped
3 ripe tomatoes or 1 tomato juice
3 bay leaves
Salt and pepper
½ teaspoon smoked paprika
½ teaspoon of allspice in powder or 7-8 grains allspice
½ cup of olive oil
1 red pepper in cubes
Wash and put the lentils in boiling water for 3 minutes, strain and rinse them in a colander.
Place the lentils in a pot, water to cover them and a little more, the juice from the tomatoes or the tomato juice, the onions, the garlic, the bay leaves and all the spices.
Simmer the lentils by stirring regularly.
When food becomes spilled, remove the pot from the fire and pour the olive oil.
Garnish with cubes of red pepper for optimal absorption of the iron that lentil contain.
