Greek style baked Chickpeas

500gr. Chickpeas
2 eggplants
2 chopped dried onions
1 clove of garlic
2 bay leaves
2 carrots
2 red peppers
Thyme or oregano
Salt, black pepper, smoked paprika, turmeric
Juice from an orange and a lemon
1 wineglass olive oil


Soak the chickpeas for 8-9 hours to inflate. Rinse and put them in a clay pot along with the rest of the ingredients (cut eggplants and carrots in cubes) and little water to cover them. Leave them in the oven for about 2 hours (until they become soft) at 200 degrees. If necessary add water during cooking.
