My Bean Soup

Ingredients
500gr. white beans
3 chopped dried onions
1 chopped leek
Juice of 5 grated tomatoes
3 carrots
2 red peppers
Celery
Salt Pepper
1 tsp turmeric
1tsp of smoked paprika
1 apple
2 rosemary clones
4 tbsp of olive oil

 

Method
Soak the beans for 8-9 hours. I wash them on a rifle and leave them aside. In a saucepan I cook the olive oil with onion and leeks for 3-4 minutes. Then add the beans to the tomato juice and the washed apple (natural pectin for our sauce, give a nice taste as well) and leave for 30 minutes to simmer (we also add lukewarm water to cover our food). Then add carrots, peppers, salt, pepper, smoked paprika, turmeric and rosemary. When we see that the apple starts to melt, it is taken out of the pot with a spoon. Let the food simmer for approximately 45minutes and about 5 minutes before closing it add the washed and cut celery
