Aromatic Apricot Jam

1200 gr. ripe apricots, pitted
800 gr. sugar
Half glass of water
1 tbsp. fresh lemon juice
3 leaves of stork or mint
Wash very well apricots and remove their pits, cut them into large pieces and place them in a large pot along with the water and the sugar.
Stir very well -always with a wooden spoon- until the jam mixture thickens. It will take about 30 minutes.
Skim the foam of the pot, if necessary.
Five minutes before remove from heat, add the lemon juice and mint and, stirring constantly.
Share the jam into hot sterilized jars and keep it in a dark and cool place. After opening, store in the fridge.
