Mushroom pie with peppers

1 package of whole wheat filo

750gr. of fresh cut mushrooms

3-4 multicolor peppers cut in rings

1 big finely chopped onion

3 ripe tomatoes cut in blocks (remove the juicy parts and seeds)

75gr. organic millet

1/2 bunch of chopped mint & 1/2 bunch of chopped parsley

Salt, pepper, tumeric powder and smoked paprika powder

A handful of thyme and rosemary

Unprocessed sesame seeds for sprinkling over

Olive oil


Saute in a pan with olive oil, first the onions then the mushrooms with the peppers. After the process is complete, mix in a bowl and add the tomatoes, millet, salt, mint, parsley and spices. In a oiled baking dish spread 3 filo sheets, brushing with olive oil between layer. Pour mixture in and add te remaining 3 filo sheets on top, brushing with a little olive oil between every layer. Cut into pieces and sprinkle with extra olive oil. Sprinkle with sesame seeds and bake 50 minutes in a preheated oven at 180 degrees.
